Microclimate:
The vineyards were built 10 km from the Adriatic coast at an altitude of 100 m above sea level, on hilly land in the immediate vicinity of the town of Buja, which has a long winemaking tradition.
One part of the vineyard is located in the vicinity of Motovun, where the climate is very good for fresher wines, because during the ripening period there are greater temperature differences between day and night. The days are warmer, while the nights are a bit cooler than in locations that are closer to the sea, so the acids are better formed.
Soil composition:
Eocene marl - a sedimentary mixture of clay and calcite minerals (rarely dolomite), known as white soil.
Vineyard architecture:
Located in the middle of unpolluted nature, surrounded by forests and wild Mediterranean vegetation, the vineyards are cultivated with full respect for nature and ecological sustainability.
Harvest:
From the end of August to the mid of September. It is made manually in 40kg baskets. The yield per vine is from 2 to a maximum of 2.5 kg of grapes.
Vinification and maturation:
Grapes arrive in refrigerated trucks from Buje (about 50 km north of Stancija Meneghetti), then go to the grape chamber, where the grapes are cooled overnight at 6 - 8°C. This is necessary in order to preserve as many natural aromas as possible.
On the second day, the grapes are pressed. Pure grape juice without skins and seeds goes into stainless steel tanks for settling (cold settling at 5°C) within 24 hours.
The next day, the grapes are poured into another tank (pure grape juice is separated from sediments), the temperature is raised and alcoholic fermentation begins
Fermentation in stainless steel tanks takes place at 15 - 17°C with occasional mixing of the fine sediment (bâtonnage). Before bottling, the wine is filtered and then sold.
Wine description:
Wine has a straw yellow color with a green reflection.
The scent very clean and precise. At the begining it opens with herbal notes of Mediterranean herbs intertwined with the scent of stone fruits such as apricot and peach, and green apples with characteristic floral notes of acacia.
In the mouth, the wine is soft, medium-bodied with balanced acids and alcohols.
